Tomato Galettes

Preheat the oven to 400°F.
To a large mixing bowl, add tomato slices and 1 tsp. salt. Allow to sit for 10 minutes, then drain liquid.
Meanwhile, in a food processor, combine goat cheese, honey, thyme, lemon zest, lemon juice, 1/4 tsp. salt, and pepper. Blend until whipped and smooth, scraping down the sides of the bowl as needed. Reserve.
On a lightly floured surface, cut (2) puff pastries into 8 equally sized squares.
Evenly spread the honey goat cheese mixture to the center of each square, leaving about a 2 inch border. Layer on 3-4 tomatoes and 2 Tbsp. garlic slices over the goat cheese.
Begin to fold up the edges of the squares and crimp into a round shape. Brush the edges with the egg and sprinkle with everything seasoning. Repeat with remaining puff pastry squares and add to baking sheets. Chill in the refrigerator for 10-15 minutes.
Bake the galettes until the crust is golden brown and cooked through, about 30-45 minutes.
Let cool slightly on a baking sheet and garnish with fresh thyme leaves, if desired.
