Kale Salad with Pear, Gorgonzola & Walnuts

Prepare the dressing: In a small bowl, whisk together balsamic vinegar, stone ground mustard, maple syrup, chopped oregano, a pinch of kosher salt, and a few cracks of black pepper. Slowly drizzle in the extra virgin olive oil while whisking until the dressing is emulsified. Set aside.
Assemble: In a large mixing bowl, combine the Kale Spring Mix lettuce, thinly sliced pear, gorgonzola crumbles, golden raisins, and walnuts. Drizzle the dressing over the salad and gently toss to evenly distribute the ingredients and coat with the dressing. Taste and adjust seasoning with additional Kosher salt and freshly cracked black pepper, as needed. Serve immediately.
